Simple Summer Recipe: Steakhouse Worthy Spinach & Artichoke Dip

Like all moms, I have strengths and weaknesses.  Cooking is not one of my strengths, but loving delicious food is one of my weaknesses.  As a result of this predicament, I tend to stick to extremely simple recipes that I can’t screw up and that taste very good.  I veer away from those kitschy chef written “20 minute Recipes!” books because let’s be honest, if it says it’s 20 minutes, it’s going to take me at least an hour.  I also have staples that I can bring to get togethers, new moms, entertaining, and this is my go-to appetizer.  It’s easy, cheap (roughly $10 total), and really doesn’t take very long, I promise!

Simple (yet classy) Spinach & Artichoke Dip

Steakhouse Quality Spinach & Artichoke Dip

Ingredients:

1/2 or 1 stick butter (depending on your day)

1 onion

2 packages frozen spinach

16oz sour cream

Can of artichoke hearts

Small package of cream cheese

Standard sized bag of  fancy mozzarella cheese

Parmesan cheese, salt & pepper (to taste)

Bag of tortilla chips or crackers

Directions:

Pre-heat oven to 350°. Chop the onion and saute in butter until the onions are clear.  Prepare the spinach in the microwave per directions on box, drain the spinach.  Add cream cheese to melt.  Stir in sour cream, artichoke hearts, and salt/pepper.  Pour delicious concoction into 9×12 pan, top with bag of mozzarella cheese and parmesan, pop in oven for 20 minutes.  Stir the cheesy goodness into the spinach and wah-la!  You have an appetizer or side dish worthy of being served in a restaurant.  Happy spinach-dipping!
